Chicken Leek and Mushroom Pie

Tonight for dinner we tried one of Joe Wicks Lean in 15 recipes, his Chicken Leek and Mushroom Pie (or a simplified version), and while requiring slightly more than 15 minutes it was pretty decent!! Apologies for the below im not exactly a slave to timelines or portions 🙂 Just go with what feels right (and no food poisoning!).This made 4 portions

Onto the Ingrediants

  • Chicken (approx 6 breasts)
  • Mushrooms (as many as you like)
  • 2 Leeks
  • 250ml of Cream
  • 250ml of Chicken Stock
  • Flour
  • Puff Pastry (this was meant to be Filo but we have now made the same mistake twice in a row!)

So onto the steps

  • Throw the Chicken, Leeks and Mushrooms into a pan and fry until they looked cooked


  • Add the Chicken Stock and Flour to thicken and leave to simmer for a while
  • Add in the Cream and leave for a minute at a low temperature


  • Transfer to an oven dish and cover with the pastry


  • Bake for 30 minutes until done

SERVE!!  NOM and with some left for lunch tomorrow
